From the Fairbourne Garden…

We love to bring you the end result of a good harvest with Fairbourne Estate’s premium Marlborough wine, but Sauvignon Blanc grapes are just one of the things we love to grow.

Screen Shot 2014-12-10 at 9.38.09 amIn case you hadn’t noticed Russell and I are real foodies and there’s nothing we like more than to prepare meals with veggies that we’ve grown ourselves. If you’re the same as us you might find that you have a glut of particular veggies as they come into harvest… About this time of year for us it’s peas!


 

We discovered this fabulous recipe in the “Celebrate Marlborough Sauvignon Blanc” recipe book, (by Belinda Jackson and Jan Bilton).


 

SoupThai-style Green Pea Soup

Ingredients

  • 1 tablespoon oil
  • 2-4 tablespoons Thai green curry paste
  • 500g peas
  • 1 cup water
  • 3/4 cup light coconut milk
  • 2 tablespoons chopped coriander

Method

  1. Heat the oil in a saucepan over medium heat. Add the curry paste and fry for 1 minute.
  2. Add the peas and water. Simmer for about 5 minutes. Purée in a blender. Sieve, if preferred. Return to saucepan.
  3. Add the coconut milk and coriander and heat through.

Serves 4

Edgehill is a site inspired dry white wine made in Marlborough with Sauvignon Blanc. The style is fresh, vibrant and very enjoyable early in its life. However, Edgehill is carefully balanced and will reward the patient with a year or two of bottle age, which means that the 2012 vintage is just about perfect to drink now!

As with all our wines, we believe Edgehill makes great food taste even better…… it has the fullness to pair well with a range of spicy and fragrant cuisine. Fresh shell-fish and citrus dressings are a natural fit. Also, try with salsa or warm chorizo and asparagus sprinkled with feta.

Edgehill has received four and five star reviews….. this is what acclaimed wine critics are saying….

5-star This is a delightful and complex sauvignon blanc. It has big tropical fruit aromas and flavours with an element of tinned asparagus. It also has a nudge of oak aged sauvignon in the blend and the outcome is a textural and layered wine – TIZ Wine Reviews, October 2013 

4-star Bright, pale straw colour with slight green hues, pale edged. This has a very fine and elegant nose, quite tightly bound, with delicate aromas of gooseberries, herbs and nettles, along with wet stones, and hints of smoke. Dry to taste, the palate is also tightly bound, but shows positively succulent and lush fruit flavours of gooseberries and herbs, unfolding to reveal tropical fruit elements. The acidity is lively, providing great tension and energy to the mouthfeel, and very fine textures provide linearity. Flavours of gooseberries, nettles, minerals and flint form a very long and sustained, dry finish.
